I love making these Eggwich Breakfast Sandwiches, then wrapping in foil and freezing for breakfast when you're in a hurry. (These egg rings or this egg pan are both my go-tos for making the "bread" that holds it all together!)
So, make your egg rounds, add a slice of turkey, a slice of cheese if it suits you, and whatever else you'd like to see on there. You can also wrap the turkey/egg/cheese sandwich combo for later. Then when you're ready, heat it, and add fresh vegetables before serving. I love to add a slice of tomato and some sprouts or microgreens.
I love the simplicity of this Thanksgiving leftovers burrito and making it for breakfast. it's not overly complicated, it contains sweet potatoes (my favorite!) and it adds a soft scrambled egg to keep it from feeling like lunch or dinner.

Then top it with some leftover rolls, cornbread, biscuits, or whatever you had for thanksgiving. Maybe tear them up into pieces, cover the top, and pop the whole thing in the oven to warm and toast the bread topping.

For me, this is the underdog. Turkey stock can be used to make the sauce for turkey pot pie, can be thickened for the meat in the shepherd's pie, and can be used for the base in the soup.
Not to mention, bone broth is loaded with protein and super good for you! It's delicious to sip on its own on a cold day.

My personal hack is to save the veggie trimmings when cooking - onion ends and outer layers, carrot peelings and ends, etc. Throw in a few celery stalks and make a no-waste stock!
