    Breakfast

    Eggwich Breakfast Sandwich

    I love making these Eggwich Breakfast Sandwiches, then wrapping in foil and freezing for breakfast when you're in a hurry. (These egg rings or this egg pan are both my go-tos for making the "bread" that holds it all together!)

    So, make your egg rounds, add a slice of turkey, a slice of cheese if it suits you, and whatever else you'd like to see on there. You can also wrap the turkey/egg/cheese sandwich combo for later. Then when you're ready, heat it, and add fresh vegetables before serving. I love to add a slice of tomato and some sprouts or microgreens.

    Thanksgiving Leftovers Burrito

    I love the simplicity of this Thanksgiving leftovers burrito and making it for breakfast. it's not overly complicated, it contains sweet potatoes (my favorite!) and it adds a soft scrambled egg to keep it from feeling like lunch or dinner.

    A spread of sweet mashed potatoes, then stuffed with turkey and eggs, this one is bound to be a hit. Freeze and wrap in foil for easy morning breakfasts.

    Mashed Potato Pancakes

    You can make these sweet or savory. If you're headed for sweet, make with leftover sweet potatoes, or top these regular ones with maple syrup and cranberry sauce. If you want savory, make them plain, or add any number of ingredients. You could mix in crumbled bacon (or turkey!), or chop up some leftover vegetables and add them to the mix before frying.

    Lunch

    Lighter in nature, these turkey salad options and perfect for busy afternoons when you want something fast, filling, and delicious.

    Leftover Turkey Salad Recipe

    This one checks all the boxes. A lighter meal after the heavy feast, cutting mayo with greek yogurt (my favorite protein hack!), lean turkey, and adding cranberries and pecans to keep that Thanksgiving vibe without the weight of the full meal. Put a scoop of this one on top of some salad greens and you've got a lunchtime win.

    Cashew Curry Chicken Salad

    Sub in your turkey for the chicken, and add dried cranberries instead of raisins if you like! The curry mixes up the flavors and makes your brain forget that you're eating turkey - yet again.

    Dinner

    Transform leftover turkey, stuffing, and veggies into dishes the whole family will love. From casseroles to skillet meals to soups, these creative Thanksgiving leftovers recipes make the most of every bite. Stretch your leftovers into a week of meals, without feeling like you have to microwave yet another plate of Thanksgiving dinner.

    Gluten Free Chicken Pot Pie

    Just like chicken pot pie, but - with turkey. Sub chopped turkey for the chicken.

    Or, get creative: use the turkey, and mix it with some leftover veg - maybe some sweet potatoes, brussel sprouts, carrots, green beans, or whatever you have leftovers of. Add in a little gravy, or make your own sauce with a little milk and flour and thicken it up.

    Then top it with some leftover rolls, cornbread, biscuits, or whatever you had for thanksgiving. Maybe tear them up into pieces, cover the top, and pop the whole thing in the oven to warm and toast the bread topping.

    Sweet Potato Shepherd's Pie

    Use turkey for the meat - stir it up with some gravy and chicken broth to thin it out. Add a layer of leftover Thanksgiving veggies, whatever you have on hand. Coat it with a layer of mashed potatoes - sweet or regular. Pop the whole thing in the oven to heat it up and dinner is done!

    Leftover Turkey Soup Recipe

    The key to leftovers soup is to use the turkey carcass to make the stock for maximum flavor. This part couldn't be easier. I've included a recipe for it below, if you need it. Then use that stock to make your leftover soup!

    Other

    For me, this is the underdog. Turkey stock can be used to make the sauce for turkey pot pie, can be thickened for the meat in the shepherd's pie, and can be used for the base in the soup.

    Not to mention, bone broth is loaded with protein and super good for you! It's delicious to sip on its own on a cold day.

    My personal hack is to save the veggie trimmings when cooking - onion ends and outer layers, carrot peelings and ends, etc. Throw in a few celery stalks and make a no-waste stock!
