This Sweet Potato Peanut Soup from Pinch of Yum is one of my favorite recipes. This instant pot vegan soup combines sweet potatoes, peanut butter, peanuts, and kale (they won't even notice, I promise!) for a hearty and creamy simple recipe. It makes a huge batch, so if you have a large family, this one's for you!
Mongolian Beef is typically sweet and tangy, and this is no exception! And while she calls for the veggies to be cooked in a large skillet separately from the meat, my go-to would be that once the meat is done in the Instant Pot, remove the meat, hit the sauté button, and toss them in there for a couple of minutes to get them tender.
