    3 Healthy Casserole Recipes (That Even Kids Will Love!)

    Finding a dinner the whole family will eat can be challenging. These healthy casserole recipes are the answer to family dinner night. Easy to make and loved by adults and kids alike - no more separate meals!

    Family dinner night can be exhausting. With so many different taste buds and preferences, it can be hard to find a balance between serving healthy food and serving something that everyone will eat.

    I started my venture into healthy casseroles with my Buffalo Chicken Casserole. It took off like wild fire and is still one of my most popular recipes, years later.

    I heard you - you said you wanted flavorful, easy, and uncomplicated. Flavors that are simple and comforting like buffalo, ranch, and taco. Comfort foods that make everyone feel good both physically and emotionally.

    Because let's be honest - eating IS emotional, and anyone that tells you otherwise is lying. What we have to do is try and identify those emotions, and figure out how we can fulfill them without eating an entire large pizza.

    So, I started taking my favorite flavors for meals that are universally comforting, and turning them into casseroles. From Buffalo Chicken, to Chicken Bacon Ranch, to Beef Taco, you'll find flavors you love, packed with veggies and nutritious ingredients.

    My most recent venture, Chicken Poppy Seed Casserole, is quickly climbing the ranks as a favorite too - the buttery, crunchy topping is the perfect compliment to the creamy casserole.

    And if you have kids? You're facing a whole different set of challenges. So many readers have told me that they can't get their kids to eat veggies, and they have no problem getting them to eat these casseroles.

    Chicken Bacon Ranch Casserole
